Looking for quick tips. Brewed a Schwarzbier yesterday, and went off without a hitch. I have a (third!) refrigerator that is plugged in to a Johnson Controls A419 controller. The probe is simply hanging in the fridge, as I dont have one of those fancy stoppers with the metal tube into the fermenter. Im trying to figure out what temp range I should set the fridge at to keep the beer in a 48-53 degree range (using WLP830, calls for 50-55) because I want to keep ester and diacetyl production to a minimum. I just have no idea how low to set the fridge temps, knowing that the beer will respond slower than the air temp inside the fridge. I have it at 45° right now, allowed to swing to 50°. Fermentation is just getting started, so I can still tweak it at noon today.
