Love... in a Vegetable Cutlet 2 small potatoes 3 cups beets, carrots, peas and cabbage ½ tsp. mango powder ½ tsp. homemade spice mix 2 green chillies 1 tsp. ginger paste 1 tsp. chopped coriander leaves 1 tsp. chopped cashew nuts 1 cup breadcrumbs 1 pinch black salt 1 tbsp. ghee 2 tbsp. oil 1 tsp. coriander powder 1 tsp. cumin powder ½ tsp. fennel powder A-Sattvic Vegetarian Frying Boil, peel and mash the potatoes. Steam the vegetables. Heat the ghee and add the ginger paste and green shredded chilli. Stir fry for ½ minute. Addthe cashew nuts, all the powdered spices and coriander leaves. Stir fry slightly for ½ minute more. Add all the vegetables and mix well. Cook until all moisture has evaporated. Mix in the mashed potatoes and salt to taste. Make small croquettes (or flatten them into an oval shape) and roll them into the breadcrumbs. Deep fry until golden brown. *Alternative: Use 2 cups crumbled paneer, 2 tablespoons fresh cream and 2 cups boiled and finely chopped spinaches instead of the vegetables listed above.
