Lunch today was Moroccan Lamb Shanks with chickpeas 3 lamb shanks (or how many you need) a drizzle of olive oil 2 finely chopped onions 2 cloves crushed garlic 1tsp ground ginger 1 teaspoon smoked paprika 1/4 teaspoons ground turmeric 2 tablespoons tomato paste 400g can diced tomatoes 1 cup chicken stock 2 x 400g can chickpeas, rinsed and drained salt and pepper You can brown the lamb shanks first if you like, I did then I bunged everything into the slow cooker and cooked on high for 6 hours. I served mine with couscous
