~MIKES FAMOUS POT-ROAST SOUP (cooking it now) 1. 3lbs Roast 2. 12 medium size Idaho potatoes 3 1 bag of baby carrots 4 6 medium white onions 5 1 large box of Mushrooms /sliced 6 1 stalk of green onions 7 4 stalks of Celery 8 1 can of sweet corn 9 1 can of peas 10 i jar of Beef paste or Bouillon Cubes 11 1 box of Beef Broth 12 1 clove of garlic and salt n pepper Take a big pot and fill it 3/4 of water,Then cut 3 of the White onions into 4 quarters and peel by layers,in the mean time take your Roast and put it in a skillet and Sear it on both sides, Add the onions and the Roast into the pot of water.Next add 6 beef cubes or 3 tbl spoons of the beef paste and crush the clove of garlic and dice it up and add to the pot, now turn on high and cover.. boil the Broth to about 1/4 of the pot, Refill the pot with more water to 3/4 full.. add 2 cubes or 1 tbl spoon of Beef paste and cover and boil to 1/4 of broth ... repat this step until your Roast begins to shred apart..once it shreds apart you fill the pot again as before and add 6 of the potatoes (chopped up) into your broth.. Boil until all the potatoes are gone.. (this thickens your Broth) once the potatoes are dissolved add the one box of Beef Broth the carrots peas corn diced celery sliced mush rooms and the other 3 quartered onions into the pot.Cook until the carrots are soft, then add the other 6 chopped potates into the pot and cook until the potatoes are soft.. dice/Chive up the green onion (then cook the green onions only for 5 mins , uncover and let boil for 15 mins and then let cool.. This will make a Huge (Chilli pot) pot of this Pot-Roast Soup. Freeze some. but i promise you its the best thing you will ever eat if done right.. and of course Salt n Pepper to taste.. ENJOY!!!!!!
