MINCED GARLIC-thought Id share this little tip someone gave me about having fresh minced garlic on hand-we cook with it a lot. Since I dont find the store bought jarred minced garlic has a good flavor, I do the following: buy a large bag/tub of peeled garlic from a warehouse type store, mince it all in a food processor and put in a gallon freezer bag. Flatten it out and freeze it flat. After its frozen, cut into cubes about an inch big. Place those cubes back in the freezer in a freezer bag and take out a cube when needed. My cubes are about a tablespoon, but you can adjust yours to your liking.
