MOROCCAN APRICOT CHICKEN ....Thought I would share as it was just yum and someone asked earlier :) - I will use these left overs and make Apricot chicken mini pies :) Cut up 1kg Chicken thighs (deboned meat - I dont use the pieces but you could) put in slow cooker coat with about 1/3 cup flour and mix it up with salt and pepper (some people would prefer to brown it off but I dont bother) so its all coated - then in a bowl I put 1.5 cups of salt reduced chicken stock, 1 can crushed tomatos, 1 onion sliced, 3 carrots chopped, 3 cloves of garlic crushed, 1 thumb size piece of ginger grated, 1 tsp turmeric, 1tsp cumin, 1 tbsp of Moroccan seasoning ( this is the key I personally add more) 1tsp coriander, 3/4 jar of Apricot jam mix it all together and pour over chicken thigh meat. I then put in heaps of fresh thyme and give it all a stir .. cook on high for 1 hour then low for 3-4hours - keep checking until meat is tender ...Or you could cook on low for about 5 hrs until meat is tender if you have time it is yum with mash and garlic bread!
