MUTTON KI DUM BIRYANI.. ingredients: Basmati rice-4cups onion-4medium(sliced) cardamom-4nos cloves-4 nos cinmamom-2stick for marination; mutton-500gms ginger garlic paste cumin/jeera seeds-1 tbsp mint leaves-a handful Coriander leaves-a handful chilli powder-1tbsp salt-as reqd. yogurt-2cup pepper powder-1 tbsp biryani masala powder-1 tbsp lemon juice-4tbsp oil-2 tbsp Method:- 1.heat oil in a pan fry sliced onion till its turn brown.keep aside. 2.marinate the mutton with the given under the heading for marinationwith fried onion. keep aside for 40-50 mins. 2.wash and soak rice in water for at least 20 mins. 3.heat 2 tbsp of oil in pressure cooker add cardamom,cinnamon,cloves,cook for a while. 4.then add all marinated mutton mix well.adjust the spice according to your taste. 5.cook for 3-4 whistles depend on tender of mutton . 6. take large pan pour 6-7 cups of water along with reqd salt. 7.let it come to boil ,add the rice and cook until it is half done .drain the rice and keep aside. 8.spread the drained half cooked rice over the cooked mutton,spread even the mint leaves.dont mix it. 9.cover the vessel tightly with aluminum foil and place a heavy weight over the lid ,so that no steam can escape which formed inside. 10.cook the rice on low flame for about 25 minutes. :-serve with mirchiyo ka salan or pudina ki chutney…
