Today on the map of Africa, we are on the West Senegal. Trying out Maafe. Senegalese traditional peanut butter soup. This soup or sauce originated from Mali. From the Mandinka and Bambara ethnic people. And now, variants of this dish, is eating throughout West Africa, Central Africa and some other African countries. As always, this is my take on the traditional. This is healthy comfort food all the way! And it was delicious!!!! Enjoy! Recipe Yields 6 Peanut butter soup Ingredients I 1/2 Cup Peanut Butter, Freshly grounded if you can 1 tablespoon tomato paste 1 medium size tomatoes, chopped 1 cup cherry tomato 1 large onion, diced 2 garlic cloves mashed 1/2 an inch ginger, peeled 2 pound beef 1 tablespoon cayenne pepper powder 1 tablespoon fresh grounded cayenne pepper. 3 thyme sprigs, fresh 1 bay leaf. Salt and pepper to taste Ingredients Vegetables Steam 1 pound green beans 3 carrots 2 cups fingerling potatoes Salt and pepper to taste Rice Cook 1 1/2 cup arborio rice or any rice. direction Soup In a deep pot over low heat. Add the peanut butter, tomato paste, onion, fresh cayenne pepper to the pot. Gently stir with a wooden spoon. For about 1 minute, add cayenne powder, garlic, tomatoes, bay leaf, thyme, beef, ginger and 6 cups of water, salt and pepper to taste. On high heat, boil the soup. Lower heat to medium. Cook an covered for 10 minutes. Stir more often than not. Cover, lower heat to low. Cook for about 35 minutes, or until done and the meat is tender. Serve with the rice and vegetables. Garnish with parsley. Enjoy and stay healthy! NOTES : Its a stew or sauce depending on the water content. Add water to it if you think you need it. Less pepper or more, depending on your taste. Use any vegetables you like. Traditionally, they prepare the vegetables with the soup. No pork.
