Macadamia and coconut protein balls Ingredients- Makes 16 200g macadamia nuts 100g almonds 10 pitted dates 4 tablespoons dried cranberries 2 tablespoons goji berries 60g pea protein powder (or one of your choice) 3 tablespoons coconut oil 2 tablespoons shredded coconut Follow these few easy steps Place the protein powder along with the macadamia nuts and almonds into a blender. Nuts should be crushed into small pieces. Place into a large bowl. Place the goji berries and cranberries into the blender until it is chopped into small pieces. Add into the bowl the the nuts and give it a good mix. Blend the dates separately as dates are very sticky and you want it to have a jam like consistency. Add the shredded coconut, coconut oil and dates into the bowl and give it a good mix. You may need to add a little bit of water for a smoother consistency. Mix all the batch around and its ready for rolling into 16 good sized snack protein balls Roll around in shredded coconut for the outside coating. Place in the fridge
