Made Apple Rutabaga Soup yesterday. Thanks to Carol Irwin for making it some 10+ years ago for our Thanksgiving feast. I have made it so often I dont need the recipe anymore! 1 stick of undated butter 1 onion 1 tart apple 1 sweet potato 1 rutabaga 1 carrot 1 butternut squash 1 quart chicken stock Salt Cayenne pepper Maple syrup 1 Cup Cream or half and half Peel and roughly chop all vegetables and apple. Melt butter in large sauce pot and add the chopped stuff. Cook over medium heat about 10 minutes, until onion is translucent. Add half teaspoon salt and chicken broth. Bring to boil then down to simmer for about 25 to 30 minutes, until a fork goes thru the vegetables easily. Purée in a blender a few cups at a time, adding the cream gradually. Put it back on the stove over low heat. Sprinkle in a bit of cayenne until it is Perfect! Serve with a driZzle of maple syrup.
