Made Baja fish tacos tonight. Coat fish (red snapper, tilapia, etc.) with mixture of yellow masa flour, paprika, cayenne pepper, salt and pepper. Place filets on cookie sheet sprayed with Pam. Spray tops of fish with more Pam. Broil until flaky. In meantime, make a salad of romaine lettuce, chopped scallions, thinly sliced radishes, cherry tomatoes, cilantro leaves. Microwave corn tortillas (20-30 sec. each) until moist and pliable. Make a dressing of plain yogurt, fresh lime juice, and 2 tsp. chipotle peppers in adobe sauce. Make tacos and enjoy! This is very yummy and healthy.
