Welcome spring and put an end to gloomy winter days with the abundance of healthy flavorsome recipes. Til Wali Mirchein 1. Large chillies filled with cottage cheese mixture, dipped in a batter with sesame seeds and deep fried. Preparation Time : 16-20 minutes Cooking time : 21-25 minutes Servings : 4 Ingredients : Bhavnagri chillies slit and seeded12 White sesame seeds (safed til) 2 tablespoons Black sesame seeds (kale til) 1 teaspoon Onion 1 medium Green chillies 2 Ginger 1/2 inch Cottage cheese (paneer) grated1 cup Potatoes boiled, peeled and grated2 medium Red chilli powder 1 teaspoon Dried mango powder (amchur) 1 teaspoon Asafoetida a pinch Turmeric powder a pinch Garam masala powder 1 teaspoon Chaat masala 1/2 teaspoon + for sprinkling Salt to taste Refined flour (maida) 1 1/2 cups Rice flour 1/2 cup Soda bicarbonate a pinch Oil for deep-frying Method : Step 1 Roughly chop onion, green chillies and ginger, place in a chopper and chop finely. Step 2 To make the filling, put cottage cheese, potatoes, chopped masala, red chilli powder, dried mango powder, asafoetida, turmeric powder, garam masala powder, chaat masala and salt in a bowl and mix well together. Step 3 Put refined flour, rice flour, white sesame seeds, black sesame seeds, little salt and soda bicarbonate in another bowl, add sufficient water and whisk to a thick batter. Step 4 Heat sufficient oil in kadai. Step 5 Stuff the chillies with the filling, dip them one by one in the batter and slide them into hot oil. Deep fry till light golden and crisp. Drain on absorbent paper and sprinkle chaat masala over them. Step 6 Transfer onto a serving plate and serve hot. __________________________________________________________ 2. Moong Dal aur Til ke Vade These green gram fritters are simply irresistible. Preparation Time : 26-30 minutes Cooking time : 16-20 minutes Servings : 4 Ingredients : Skinless split green gram (dhuli moong dal) soaked in water for ½ hour and drained1 cup White sesame seeds (safed til) 2 tablespoons + for coating Asafoetida 1/4 teaspoon Red chilli powder 1 teaspoon Turmeric powder 1/4 teaspoon Cumin seeds 1 teaspoon Fennel (saunf) powder 1 teaspoon Dried mango powder (amchur) 1 1/2 teaspoons Gram flour (besan) 2 tablespoons Salt to taste Oil for deep-frying + for greasing To serve Green chutney as required Sweet tamarind chutney as required Method : Step 1 Grind together green gram, asafoetida, red chilli powder, turmeric powder, cumin seeds, fennel powder, dried mango powder and 2 tbsps white sesame seeds into a coarse mixture and transfer into a bowl. Step 2 Heat sufficient oil in a kadai. Step 3 Grease a plastic sheet and your palm with a little oil. Spread some sesame seeds on the sheet. Take small portions of the mixture, and spread on the sesame seeds to make a vade. Make a small hole in the centre and sprinkle some sesame seeds on the top. Step 4 Deep-fry the vade in hot oil till golden and crisp. Drain on absorbent paper. Step 5 Transfer the vade onto a serving plate and serve hot with green chutney and sweet tamarind chutney.
