Many nutritional dictates have focused on the intake of cholesterol and saturated fats as a leading cause of heart disease. Yet, this is SIMPLY NOT TRUE! Its time the truth is promoted and not the lies. The truth is the main cause of heart disease is inflammation and inflammation is fueled by excessive carbohydrates, high omega-6 polyunsaturated vegetable oils and hydrogenated vegetable oils like margarine. Consuming saturated fats and cholesterol (not oxidized) DOES NOT FUEL INFLAMMATION! A nutrient that is able to effectively fight inflammation is the 4-carbon (short chain) saturated fatty acid called butyric acid. Studies have shown several health benefits of consuming foods rich in butyric acid. These benefits are: 1) better metabolic health - lowers insulin resistance which helps prevent type-2 diabetes. 2) Promotes colon health-butyric acid fuels colon cells and facilitates the absorption of minerals. 3) It helps prevent cancers. 4) It reduces inflammation in the colon. 5) Finally, butyric acid is anti-microbial. Organic butter from grass-fed cows is an excellent source of this inflammation fighting fatty acid.
