Maple Ginger Mahi Mahi 1 tablespoon honey 1 tablespoon maple syrup 1-1/2 tablespoon soy sauce 1-1/2 pomegranate balsamic vinegar (PC product) 1 teaspoon fresh grated ginger root (use PC zester) 1 clove garlic, crushed (use PC garlic press) 2 teaspoons garlic infused canola oil (PC Product) 2 (6 oz) mahi mahi fillets Ginger Citrus Rub (PC Product) Maple Herb Rub (PC Product) Combine first 7 ingredients in a shallow baking dish to make a marinade. Season Mahi Mahi with Ginger Citrus Rub & Maple Herb Rub. Place Mahi Mahi in marinade, covered, refrigerate for 20 minutes (turning once). Heat PC grill pan & press with 1 tablespoon oil olive. Place Mahi Mahi (reserve marinade) in grill pan and cover with grill press - Cook over medium heat for 2 minutes turn and cook for another 2 minutes. Add reserved marinade to pan, reduce for 2 minutes or desired consistency. Serve immediately over rice with Garlic Herb Yellow Squash. (Heat 1 teaspoon garlic infused canola oil and 1 teaspoon better, 1 glove crushed garlic in PC 10 skillet. Slice yellow squash, season with PC Garlic Herb Rub, add to butter & oil saute for 5 minutes, turning once. Quick and easy - dinner done in 30 minutes.
