Margaret after processing her raw meats she explained there was about 2 inches of head space and wanted to know if there was a trick or is that how its supposed to be? The answer is as the meat cooks in the jar it they will occupy less space and the result will have a bigger headspace. That is perfectly normal. The most important thing is to start with the proper amount at 1 so that your jars will seal and be safe as the air is evacuated from the top!
