Marshmallows Serves 12 Ingredients: Gelatine 50ml Cold Water 250 ml (170 g) Huletts SUGAlite Pinch of Salt 125ml (½ cup) Water 1 Egg White 5ml (1t) Vanilla Essence Method: Hydrate the gelatine in the cold water. Boil the Huletts SUGAlite, salt and water together until soft ball stage is reached. Take off the heat and stir in the hydrated gelatine, stir well until the gelatine has dissolved. Beat the egg whites unitl the soft peak stage. Gradually pour the warm syrup into the foam beating continuously until it is thick and creamy. Mix in the vanilla essence and pour into a greased tin. Leave the marshmallows in cool dry place until set. When set cut into squares.
