Maureen Paulson> Beef Casserole 750 g beef 1 onion, sliced 1 carrot, sliced Parsley 500 ml diced tomatoes, or tin chopped tomatoes 250 ml cooked green peas salt Peppercorns 30 ml flour for thickening 1. Cut the meat into 3 cm cubes 2. Place the meat in a casserole dish 3. Add the onion, carrot, parsley, tomatoes, salt and peppercorns and 500 ml water. 4. Cover and place in the oven at 150º C for 2-3 hours until the meat is tender. 5. Remove a little of the gravy and mix with the flour to form a smooth paste. 6. Stir into the gravy in the dish to thicken. Add cooked peas and reheat before serving.
