May Oh it would not let me upload from my computer so here it is. You can leave the garlic out. Glorias Spaghetti/ Red Sauce 1/4 cup Extra Virgin Olive Oil 2 cups chopped onions 2 cups chopped green peppers ( Bell or any sweet peppers, and colors) 4 tablespoons chopped garlic 12 cups peeled and chopped tomatoes 4 cans good quality tomato paste 3 tablespoons sugar 2 tablespoons basil 1 tablespoon parsley and oregano 1 tablespoon plus 1 teaspoon salt Heat olive oil in a large heavy saucepan over med-high heat. Add onion, pepper and garlic. Cook about 3 minutes or just until softened. Add rest of the ingredients. Turn your heat to low and simmer until the tomatoes are soft and tender. Be sure to stir so that sauce does not stick. I have a stick blender that I just stick in the pot and whirl away until I get the consistency I want. I prefer chunky but can be made smooth. You can let it cool and use a blender or food processor to do the same thing. Can be used on pasta, pizzas or anything calling for red sauce. Add meat or no. This will serve at least 8 people. Throw in 1 cup heavy cream with half this sauce and you will have something different and delicious!!
