Click the link to join: on.fb.me/1n9Ihod Pumpkin Soup ala Crema recipe Ingredients: 2 cups pumpkin, cut into small cubes 1/4 cup each onions and celery, diced 4 tbsp vegetable oil 1/2 cup all-purpose flour 1 1/2 liter water salt and pepper to taste 1 pc chicken broth cube Directions: 1. Heat up oil in a pot. Saute onions until translucent. 2. Add in the carrots and celery. Saute for 3-4 minutes or unitl the carrots and celery turn slightly brown. 3. Add in the pumpkin. Saute for another minute then add the flour. 4. Stir well and saute for another 2 minutes. Add in the water and scrape the bottom of the post to release the pan drippings. 5. Add chicken broth cubes and let it summer until all the vegetables are tender to the bite. 6. Remove from heat. Blend the soup using a food processor or kitchen blender. Make sure to fill only half of the jar/food processor to avoid overcrowding and spillage. 7. Strain the pureed soup using a fine mesh strainer and pour it back to the pot. 8. Add in the Alaska Crema and bring back to simmer while stirring continuously. 9. Once thick, season to taste with salt and pepper. Garnish with croutons or bacon bits. Serve hot.
