Meal of the Day: Breakfast Asparagus Frittata -2 cups fresh asparagus spears cut diagonally into 1" lengths -1/4 cup minced red onion or green onions -1 whole egg & 4 egg whites (lightly beaten) -1 tablespoon unsalted butter (optional) -pinch of salt -1/3 cup shredded part skim Swiss cheese Saute onion with butter or just simply brown it with a little of PAM spray in a oven proof frying-pan. Then add asparagus and cook for about 3 minutes with onions. Pour in beaten eggs and cook until almost set but still runny on top, about 2 minutes. While cooking, pre-heat oven broiler. Sprinkle cheese over eggs and put in oven to broil until cheese is melted and browned, about 5 minutes. Remove from oven and cut into 2 wedges. Enjoy!! If you are not a asparagus fan substitute the asparagus for broccoli or baby spinach. You can also replace the Swiss cheese for your favorite cheese. Did you like this meal/recipe? If so click LIKE.
