Microwave Caramel Fudge Recipe INGREDIENTS 125g butter OR margarine. 500ml castor sugar. 1 can (397g) condensed milk. 25ml vanilla essence. 15ml vinegar. pinch of salt. STEPS Line a 20 x 20cm pan or dish with foil. Grease the foil with butter OR spray with non-stick spray. Set aside. In a deep 3,5 litre microwave safe bowl microwave the butter OR margarine uncovered on 100% power for 1 minute. Add the castor sugar and condensed milk. DO NOT STIR! Microwave uncovered for 1 minute on 100% power. Stir thoroughly with a wooden spoon. Microwave the fudge uncovered on 100% power for a further 10 minutes, stirring well at 3 minute intervals. Add the vanilla essence, vinegar and salt. Beat the fudge with a wooden spoon until it begins to thicken and firm up. Transfer the fudge immediately into the lined, greased pan or dish. Level the top. Allow to cool slightly. Cut into 2,5cm squares before it sets completely. Leave to cool completely. Turn the fudge out of the pan or dish. Remove the foil. Carefully break the squares apart. Store in an airtight container.
