Microwave Peanut Brittle recipe 1 C. Raw Peanuts 1 C. Sugar 1/2 C. White Corn Syrup 1/8 t. Salt 1 t. Butter 1 t. Vanilla 1 t. Baking Soda In a 1-1/2 quart casserole dish, stir together peanuts, sugar, syrup and salt. Microwave on high for 4 minutes. Stir well and microwave for 4 more minutes. Stir in butter, vanilla and microwave for 2 minutes longer. Add baking soda and quickly stir until light and foamy. Pour immediately into a pan (greased cookie sheet). Spread out thin. Cool and break into pieces. (I did cut my first 2 microwave times to 3 minutes, as my microwave mics very hot, thus the burning smell and dark color) Microwave Divinity (hubbys fav) 3 C. Sugar 1/2 C. Light Corn Syrup 2/3 C. water 1/4 t. Salt 2 Egg Whites 1/4 t. Vanilla 1 C. Chopped Nuts In a 3 quart bowl microwave cook sugar, syrup, and water on high for 12-13 minutes. Add salt to egg whites and beat on high until stiff. Slowly pour mixture into the egg whites, beating constantly until mixture loses its shine. Stir in vanilla and nuts. Drop by teaspoon on wax paper. Yummy! (I have added drops of food coloring to pastel this, if wanted) 3 Minute Microwave Fudge (super easy and good) 12 oz Chocolate chips 1 can Sweetened Condensed Milk microwave on high for 3 minutes Stir well Stir in 1 t. Vanilla and nuts Pour into buttered 8x8 pan Refrigerate until firm Cut and enjoy! Easy Holiday Sweets!!
