Mix 1 pound ground beef with 1/2 pound mild Italian sausage In a blender or food processor, mix: 1 small chopped onion handful grated parmesan handful fresh parsley 1 egg a few good splashes of worchestershire sauce, or even steak sauce like A-1 Mix that up with the meat and form into small meatballs...I make mine a little smaller than a ping-pong ball. In a large ziplock or small paper bag, put a few good handfulls of flour, some salt and pepper, a little hot pepper. In a bowl, beat up 2 eggs. In a 2nd large ziplock or small paper bag, put in a few handfulls breadcrumbs (I like Panko ready-made crumbs, they are in the Asian food section of supermarkets, but you can also just blend up crackers or stale bread yourself) Roll the meatballs, a few at a time, in flour, dip them in the beaten eggs, then roll them in the bread crumbs. You can do these 3, 4 at a time. Heat up, in a large saucept (like youd use for cooking pasta) a few inches of vegetable or canola oil. I heated it on the med setting on my stove. Then drop the meatballs in, a few batches at a time (not too crowded), roll them around every so often so they get evenly golden brown. Take them out with a slotted spon and let them drain in a colander. Sprinkle with a little more salt and pepper, or some more grated parmesan. Done and done!! They are SUPER YUM!!!! XOX Daria
