Mixed Fruit Coffee Cake Mixed Fruit Coffee Cake is an easy, old-fashioned recipe filled with fruit and nuts. * ingredients: 1 (8-ounce) can peaches 1 (8-ounce) can pineapple tidbits 2 cups flour 1/3 cup brown sugar 2-1/2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1/8 teaspoon cardamom 1/8 teaspoon nutmeg 1/2 teaspoon salt 1/2 cup butter, softened 2/3 cup reserved fruit juice 1 egg 1/3 cup buttermilk 1/4 cup granulated sugar 2 tablespoons butter 2 tablespoons honey 2 tablespoons reserved fruit juice 1/2 cup walnuts * Preparation: Drain fruit, reserving juice. Measure out 2/3 cup of the juice and set aside for the coffee cake, then measure out 2 tablespoons of the juice and set aside for the topping. Cut peaches into small pieces if they are slices. Preheat oven to 375 degrees F. Spray a 9 pan with nonstick baking spray containing flour and set aside. In large bowl, combine flour, brown sugar, baking powder, baking soda, cinnamon, cardamom, nutmeg, and salt and mix well. Cut in butter until particles are fine. In small bowl, combine reserved 2/3 cup fruit juice, egg, and buttermilk and mix well. Add to the flour mixture and stir just until combined. Add the reserved fruit. Spoon batter into prepared pan. In small saucepan, combine granulated sugar, butter, honey, and 2 tablespoons reserved fruit juice. Bring to a boil over high heat, then remove from heat and stir in walnuts. Spoon this mixture evenly over batter in pan. Bake for 25-35 minutes until cake is done. Let cool 20 minutes, then cut into squares to serve. Serve warm. Linda Larsen busycooks.about
