Molly Werner Garza ^^ THE DAILY DISH ^^ Orange Honey Muffins Ingredients: 1 orange 8-12 tsp. honey or brown sugar 1 egg, beaten 1/4 cup oil 1 1/2 cups sifted flour 1/2 cup sugar 2 tsp. baking powder 1/2 tsp. salt Directions: Cut orange into slices and then quarter them. Grease bottom of muffin tins. Place honey or brown sugar (amount depends on your preference) and orange slices in muffin tins. Mix the egg, oil and milk together. Sift the flour, baking powder and salt together. Add these ingredients and the sugar to the liquid mixture. Pour into muffin tins and bake at 375 degrees F for 20-25 minutes. Sausage Dinner Ingredients: 1 lb. smoked sausage, chopped 1 (1 lb. 2 oz.) can hominy, white or yellow 2 (15 oz.) cans black eyed peas or bean of preference, drained Directions: Brown the sausage in a skillet for about 5 minutes. Add the hominy with a little of the liquid and the drained black eyed peas. Simmer together until hot and tasty, about 20 minutes, adding a little more water or broth if necessary. Good served with cornbread. Pasta with Fire Roasted Tomatoes Ingredients: 1 (8 oz.) pkg. fat free cream cheese 2 cans of diced fire roasted tomatoes 1 tsp. garlic salt 1 box angel hair pasta 1 cup spinach or broccoli (optional) 1 Tbsp. chopped onion flakes 1 tsp. pepper Directions: While boiling pasta, melt cream cheese and tomatoes in a sauce pan on medium. Stir until well blended and cheese is melted. Add vegetables. Drain pasta and rinse. Pour sauce over pasta and serve with hot rolls. Experiment with variations, such as adding mushrooms and using flavored fire roasted tomatoes. Pumpkin Muffins Ingredients: 1 cup flour 1/2 cup brown sugar 2 tsp. baking powder 1 tsp. pumpkin pie spice 1/2 tsp. salt 1/4 tsp. baking soda 3/4 cup canned pumpkin 1 egg, slightly beaten 1/4 cup milk 1/4 cup sunflower oil 1 cup oats 1/2 cup sunflower seeds Topping: 1 Tbsp. sunflower oil 1/3 cup brown sugar 1 tsp. flour 1/4 tsp. pumpkin pie spice 3 Tbsp. sunflower seeds Directions: Sift dry ingredients. Combine pumpkin, egg, milk and oil. Add to dry ingredients. Add oats and seeds. Fill paper baking cups 3/4 full. Sprinkle with topping. Bake for 18-20 minutes at 400 degrees F. Makes 12-14 muffins. For topping: Mix all until crumbly.
