More cool new stuff! This week Todd was harvesting and then doing an active count of yeast cells. One big expense in the Brewery process is yeast. We now have conical fermentors that allow us to capture the right yeast and then grow more and be able to use in the next batch of beer. The yeast can determine how the beer tastes as well as many other characteristics that a certain beer possesses. The microscope has a digital screen that allows you to count the cells in grids. Jake is shown removing the yeast from the cone. You need to harvest the right yeast portion as the ones that drop out too early or too late in the process are not the best sample.
