Most speculation as to coffees mode of action is that it is due to antioxidants, but if you are a blood type glycobiology scientist youd know that coffee (and soy as well) contain enzymes that split off proto-cancer antigens that can derail the normal immune response. The enzyme is a 1-6 side chain n-acetyl-sialyl-galactosidase. This enzyme splits a marker (antigen) that looks a lot like type A blood. Thus the beneficial rating of coffee for type A. Also the reason that coffee enzymes are used to de-antigenate A type erythrocytes and create type O blood.
