Mushroom Rice This is one of my mom’s (Betty Day) signature side dishes. She has been making this since the early 70’s. Makes 6 side servings or 4 if you have hungry people. 2 10 1/2 Oz cans of Beef Consomme or Beef Broth soup. 1 13.25 Oz Pieces & Stems Mushrooms (Drained) 1 Cup Raw Rice (Not Minute Rice) 1 Medium Onion (Diced) 1 Tbs Butter or Margarine 1 tsp Sugar 1/2 tsp Accent Use a 1 1/2 quart covered casserole dish Conventional Oven Prep time 5 minutes Cook time 35 - 50 Min. Preheat Oven 350 degrees. Add all ingredients to casserole dish. Cook uncovered and Check after 35 minutes. The food is done when the liquid has been absorbed. Microwave Oven Prep time 5 minutes Cook time 15 - 20 minutes. Add onion and Butter to casserole dish. Microwave on high for 2 minutes covered. Stir onion and butter continue to microwave for 3 minutes until the onion wilts. Add remaining ingredients remove cover and microwave on high for 10 minutes. The food is done when the liquid has been absorbed.
