My beastly gatemark #12 baked up some delicious rolls!! 4 tsp active dry yeast 1/4 cup warm water. 2 eggs 1 cup milk 1 cup water 1 tsp salt 2 TBS honey or sugar 2 TBS butter 5 cups all purpose flour. In large bowl proof yeast by adding the 1/4 cup warm water to the yeast. When there are bubbles in the yeast you know its working. Meanwhile combine milk, water, salt, honey and butter in small saucepan and heat to a tad more than warm. About 100 degrees ( I just touch it and as long as it doesnt burn me its good) if its too hot just wait a bit, or I placed it in the fridge for a couple min. Next wisk eggs into yeast and water. Gradually add the milk mixture. Not too fast so you dont scramble em. Then add flour 1/2 cup at a time. When its all added you put onto floured surface and knead for 5-10 min until its elastic in feel. Not so sticky. Form ball and put in bowl and cover with towel for 1 hr. Once doubled in size, knead again and put back into bowl to rise for 1 more hour. You can skip this, but it makes the texture better. Once doubled again punch down, divide into two for bread loaves. Knead roll out into a rectangle and then roll up, pinch ends and fold ends into center ( a YouTube video may be helpful here lol) then place into greased loaf pans. For rolls I did similar process only I kneaded a bit and tucked into balls and placed, spaced a bit apart from one another, into buttered #8 (10 inch) cast iron skillet. Cover with towel and let rise until theyre just above the rim. Bake at 350 for 20-25 min. I added butter on top at the end. Soooooooo good. :))) * you can check the doneness by tapping on the bottom of loaf, if it sounds hollow its done. :)
