My dad was kind enough to simmer out the bones from the wild goose we all had for Christmas dinner, and then give us the resulting consomme - his loss - its nothing short of spectacular (if you like that sort of thing, of course). Incredibly rich, deep flavors - I just added a pinch of molten salt (Celtic salt blended with cayenne pepper) and we had a super hearty, mineral rich broth. One of my goals for the year - nothing going to waste!
