My daughter asked me if I would post this recipe. I have been making it since the 70s when I learned to cook. Its always been a family favorite. A lot of people have asked me for this recipe in the past. I must say it was hard to actually write it down since I just make it from memory. Never really stopped to measure anything. But here goes. Lauries Awesome Creamy Chicken over Rice 1lb boneless chicken breasts, cubed 4 T. Flour 1 tsp. Salt 5 T. Butter 1/2 med. onion, chopped or instant minced onion 3/4 C mushrooms, sliced 1 1/2 C chicken broth 2/3 C sour cream 1/8 tsp. pepper Cooked rice. Roll cubed chicken in flour and fry in melted butter in large deep pan. Add onions and mushrooms, cook till onions are clear. Add salt and pepper. Add broth and simmer for 10-15 minutes. Stir in sour cream, mix well. Sprinkle with enough flour to thicken, or use cornstarch and water mixture(2 T cold water mixed with 2 T cornstarch) Serve over rice. You can add more broth if you have more people than expected. It still turns out great.
