My former Pastor Katherine Ewald Olsons grandfathers Welsh Rabbit cheese recipe. Enjoy! Granddads Welsh Rarebit Ingredients: 2 lbs. sharp aged cheddar cheese 1/4 c beer 1 tsp dry mustard 2 T red wine vinegar 1 tsp paprika 2 T Worcestershire sauce 1 egg Directions: Shred the cheese in a food processor and set aside. Mix all other ingredients (beer through egg) in a small bowl. Add as much cheese as you can in a double boiler, and add the wet ingredients. Stir with a wooden spoon over medium heat. As the shredded cheese melts, add the remaining cheese a little at a time. Stir and be patient as all the cheese melts into a sauce. (If too thick, add beer 1 T at a time until it reaches desired consistency.)
