My recipe for today. Pineapple salsa Take one fresh pineapple, cut the skin off it and core it and throw those bits way. Chop the remainder into smallish but not tiny chunks and place in a non conductive bowl. Add handful of fresh torn mint leaves, finely diced fresh chili (to taste), some fresh ground ginger (about 1/4 teaspoon) a teaspoon or so of fish sauce and a grind some black pepper over it. Mix together and cover it with glad wrap or a plate and let it sit for about an hour. Lovely with prawns, ham and anything else you fancy but not sensitive body parts (chillies and sensitive body parts dont mix).
