No smoothies today, but healthy cookies with only 4 ingredients: banana, grated coconut, nuts and 1 egg! They taste delicious. (facebook/mengelmix its a Dutch page, but often we also post English recipes) Banana-cookies Good for 8 cookies Labels - Vegetarian - Gluten free - Paleo Ingredients - 1 banana - 60 gr grated coconut - 1 hand of nuts - 1 egg Necessities - blender Preparation 1. Preheat the oven to 200 degrees Celsius. 2. Peel the banana and put it in the blender with the coconut and the nuts. 3. Mix it all through. 4. Grab a baking tray and baking paper. 5. Put the ‘dough’ on the baking paper and press it down until it is 8mm-1 cm thick. 6. With a glass you can press out the cookies. Turn your glass, so the cookie let’s go. Get the left over ‘dough’ and press it down again and repeat the process. 7. Mix the egg with a fork and divide this on top of the cookies for a golden gloss. 8. Put the cookies in the oven for approximately 20 minutes until they are golden.
