North Eleuthera used to be a major agricultural and cattle farming area. During our many trips around Eleuthera over the past four years, we have not seen a single cow....last evening driving back to Governors Harbour from the Whale Point Ferry.....we came across a COW walking down the middle of Queens Highway!!! The really great news is that there are many thriving small farms in central and northern Eleuthera primarily growing bananas, limes, sour oranges, cauliflower, potatoes, onions, herbs, cabbages, pineapples, purple green beans (they turn green when cooked?) and many varieties of lettuce and salad greens. Many of the small farms are organic.
