O-BA-MA PU-IT-TAY Early this morning, my Kumadi Michelle phoned me to ask that I post again the recipe of the dish she had asked me to concoct the first time her husbandry stood on the threshold of the Balay nga Busag. She said that she’d serve it again this second time around when Kumpadi Barrak comes home after meeting Kumpadi Pinoy in Manila. Hence, I have decided to. Ingredients: 1 kilo pork belly (cut into adobo serving pieces) 1 pack chicken thighs (cut into two, if needed) 1 pack chicken liver 1/2 kilo squid (washed and cut into halves, with the ink if you wish) 2 cans quail eggs (drained) 1 cup green olives (washed to make it less salty) 1 piece ginger (the size of two thumbs, peeled and sliced into strips) 1 whole garlic (each clove peeled and sliced) 1 big onion (peeled and cut any way you want ) ½ table spoon cinnamon powder 1 teaspoon (black pepper, or ½ if you don’t want it spicy) ½ cup soy sauce ½ cup vinegar 1 cup Mama Sita barbecue sauce 1 red and 1 green bell pepper, carved (for garnishing) Procedure: 1. In a kettle, combine the pork, chicken, liver, squid, ginger, garlic, onion, cinnamon powder, black pepper, soy sauce, vinegar, and barbecue sauce. Mix together and boil. 2. Stir, from time to time. 3. When the sauce is already sticky, add the olives and eggs. 4. Let simmer a bit. 5. Place in a serving dish. 6. Garnish with carved red and green bell pepper.
