OOEY GOOEY CHOCOLATE CHIP COOKIE These are hands down the best chocolate chip cookies I’ve ever ate! This recipe is versatile for all lovers of chocolate chip cookies. Use whatever flour you desire or use eggs, these cookies are promised to rock your cookie world forever! Ingredients: • 1 1/4 cup gluten free all purpose flour • 1/2 tsp Himalayan sea salt • 1 tsp baking soda • 1/2 cup coconut oil (solid) • 3/4 cup coconut sugar • 1 flax egg (1 Tbsp of ground flax + 3 Tbsp of water) or 1 egg • 1 tsp of vanilla extract • 3/4 cup chocolate chips or chunk Instructions: 1. Preheat oven to 350 degrees. Using parchment paper, line cookie sheet and set aside. 2. Whisk flour, salt, and baking soda in a separate bowl. 3. In food processor, cream oil and sugar until smooth. Add flax egg and vanilla extract and blend. 4. Mix flour mixture 1/2 cup at a time until well blended. Mixture will be thick. 5. Mix in chocolate pieces by hand. 6. Measure out one tablespoon of dough and roll into balls. 7. Place rolled ball on cookie sheet and gently flatten using palm of hand. Leaving one inch between cookie dough balls. 8. Bake for approximately 8 minutes or until cookies are lightly brown and set. 9. Remove from oven and allow to cool on baking sheet for a few minutes before transferring to wire rack.
