Oatmeal Pancakes-aka Protein Pancakes! (This has always been one of my favorite breakfast recipes! They sound strange, but are SUPER good!!!) INGREDIENTS: 1/2 cup old fashioned oats 1/4 cup low fat cottage cheese 4 egg whites 1 tsp vanilla extract 1/4 tsp cinnamon 1/4 tsp nutmeg DIRECTIONS: Process all ingredients in blender or food processor until smooth. Spray nonstick skillet with cooking spray. Add batter and cook over medium heat until both sides are lightly brown. Serves 1 NUTRITION: 288 cals, 28g protein, 32g carbs, 4g fat, 5g fiber
