Of Alu-Beans & Scrambled Eggs Roti was a staple for us at night and rice was unheard of. So Ma had to constantly I guess think up foods that we could have with roti -- vegetables meant to have with rice were a strict no-no. She also had to make sure that we ate what was on the table. So here is one trick she had up her sleeve and we all fell for it and loved it. Parboil potatoes and cube them Slice beans Slice half an onion fine Heat just a little oil and sprinkle a quarter tsp of pepper Add the onions and the potatoes and mix well Slow cook for a few mins and add the beans along with salt to taste Mix well and cover and cook. Sprinkle a little water if it it sticks to pan. When beans and alu both cooked, remove from pan. In same pan or you may use another, heat just a little butter and scramble a couple of beaten eggs Add the alu beans back into it and add pepper powder to taste and mix well. Thats it. Its delicious, especially that aroma of butter and goes very well with rotis and a katori of dal.
