Ok I need to publish this ridiculously easy butternut soup recipe.. Thank you daughter Caitlin Kingsley. I butternut squash 1 apple 1 onion 1 tablespoon sour cream A few shakes of thyme Salt and pepper to taste Chop onions and sautée in olive oil in pot.. Add cut up squash and Cut up apple and place in pot and Cover with chicken broth. Cook until squash is soft. Use immersion blender or but in a blender and mix until looks like soup. Then stir sour cream and salt and pepper to taste!!
