Ok my easy bread. I lb (500g) any kind of strong bread flour. 1 tsp salt. I heaped tsp or one little sachet yeast ( the easy bake sort), a tablespoon of olive or sunflower oil, warm water ie chill just off. Put the flour in a large bowl or the bowl of your food mixer if you have one with a dough hook. Put salt near one edge, yeast the other side and oil in the middle. Slowly add warm water, mixing all the time slow speed if using a mixer) til everything is mized in and you have a slightly sticky dough. Then knead either by hand or with a mixer til it is smooth and stretchy and not sticky any more. Put it back in the bowl, cover bowl with clingfilm til dough has doubled in size. You can also leave it in the fridge overnight. Put oven on to 200 and put a shallow tin of water on the bottom shelf. Shape the dough however you want- loaves, rolls etc in tins or on a baking sheet and cover with a clean tea towel and leave to rise til again almost double in size. Bake til deep golden brown and it makes a hollow sound when you tap the bottom. Souds like a lot but you can leave it for long periods of time and get on with something else.
