Okay Jenn Campos Thai Style chicken stir fry: take 1.5 pounds boneless skinless chicken breast strips and cut into cubes. Dry rub with salt, paprika, safflower, crushed red pepper flakes, ginger. I use fresh tumeric but if you use powder add to rub. Rub chicken well until coated with spices. Have half a bulb of garlic chopped into thick pieces and half a red onion chopped. If youre using fresh tumeric, peel and chop half a cup. Add ingredients to skillet, add curry powder and gingermm and cook chicken through. Then add a red, green, orange, and yellow bell pepper cut into strips, spinach, brocoli and a package of pineapple cubes. Saute to your liking, some people like crispier veggies than others and add one jar of Indian curry paste. Heat through and serve over rice. Makes about 6 servings, 3 if youre Portuguese. ;-)
