Okay, many have asked me to share this with the masses, my intent is to inform and hopefully affect positive change, because Texas Land and Cattle used to be a favorite for my family.... I have been taking my family and friends to TLC since at least the late 1990s. It has always been exceptional and a reasonable value for the food, atmosphere and service. We were greatly disappointed in the changes to the menu, uniforms, place settings, china, food quality and portions. The only redeeming factor is that the new steak knives are now sharp. The new uniforms and place settings changed an elegant Texas themed upper scale steak house into a low class, but expensive with skimpy portions reminiscent of Bonanza/Ponderosa, or Cowboy Bobs. Not a positive change, and as a native Texan, I am embarrassed to take my out of state/country business guests to the new TLC. The new menu while adding more sides, deleted some of the favorites: the bacon wrapped filet, the Gails Quail, and others. The portions are now smaller. My second favorite after the Quail, the smoked peppercorn crusted sirloin was horrible and the new 4 part menu a disaster to recreate it. My wifes Sangria was not at all sweet (hello, its a Sangria!). She ordered the chicken tostado salad. The use of vinaigrette dressing added without consultation kept her from adding the dressing of her choice, the tostado chips were stale and tasted like they were poured from a Frito bag (tasted like Fritos too); the former grilled chicken chunky strips were replaced by deli-thin slices of chicken so obvious that costs are being deeply cut! The portions of my steak and my wifes salad were embarrassingly small. I also order the side of grilled shrimp which was forgotten by the waiter. When my cold shrimp arrived on its own Chuck Wagon Bobs white plate there was no melted garlic and cheese seasoned butter or lemon wedges. I asked for the same, but was told -- we no longer offer that. My steak was served on hokey looking white plates (not china) with a half of a Roma Tomato with bland tasteless bread crumbs that appeared to be shaken out of the toaster. The steak and toaster crumbed tomato half sat openly on the vast real estate of the cheap white plate. My spicy Caesar Salad was served in a white wagon train chuck wagon looking Jethro Bodeen bowl as was my wifes tostado grilled chicken salad. I was sadly remembering the last days of the Ponderosa chain when only the roaches were faster than the food service. Best of all are the new Bounty paper towel lumberjack shirted uniformed wait-staff. Again, as a native Texas, this truly embarrasses me. I could almost see a Canadian chain trying to pull this off, but as I travel all over Canada on business -- they too know better! I would normally bring this to the attention of the General Manager, or ask for the contact information of the regional or district manager. I suspect however, these poor souls have been dumped upon by some brain-child at corporate and are hardly empowered to make positive change. I only write this because, I really like the old menu and atmosphere -- it was authentic and Texan with style. I judge a steak restaurant by: can I grill a better meal, and is it worth my hard earned dollars when I am too tired to do so. TLC fails. I am now looking for new options even at greater expense. I will be sure to tell all my friends, relatives and countrymen DO NOT waste your hard earned money at TLC.
