On the menu this evening I am doing a little southeast meets southwest concoction. A black bean stew with corn , bell peppers, potatoes , garlic ,chili powder, chicken stock, kosher salt and I threw in some shredded curry chicken that I sautéed in curry, onions , paprika and butter. I deglazed the pan and threw it all in a crockpot and have been slow cooking it for the last 3 hours and going to serve it with fresh romas on top. I would have liked to serve it with naan , but I had naan(see what I did there)so we are using tortillas instead. Pictures to follow soon mang
