One of the fun things I get to do as a chef and wine educator is write wine paired recipes for clients. I am currently working on a series of about eight different wines. This is the third recipe in the series. I LOVE how it turned out. Pan Seared Halibut with Nectarine Tarragon Salsa Recipe by Patrick Bartlett Photos and Graphic Design: By Jake Stanford of Mood Creative Serves 4 Ingredients 4 Halibut Fillets Salt and Pepper 1 Nectarine diced 1 Tablespoon fresh Tarragon Minced 3 tablespoons coconut oil Method Mix diced nectarine and tarragon, set aside. Season halibut with salt and pepper. Heat heavy skillet over med-high heat. When heated turn heat to medium. Sear halibut for about 2 mins on each side or until just losing its opaque color - DON’T overcook fish or it will be dry. Served With: Fennel - Black Pepper Scented Risotto and Grilled Asparagus Tips. Risotto Follow instructions for four servings. About an hour before preparing, heat chicken or vegetable broth until starting to simmer - add 2 tablespoons fennel seeds and ½ tablespoon cracked peppercorns. Allow to steep. When ready to make risotto, simply strain the fennel and pepper from the broth and complete recipe as instructed on package or based on your preferred method. For this dish, shaved parmesan and minced fresh chives were added just before plating. Asparagus Tips Simply toss tips in some olive oil - for this dish blood orange infused olive oil was used for added flavor layers to the final dish. Season with a touch of kosher salt and roast for about 10-12 mins in a 400f oven. Wine Pairing - Woodworth Vineyards Golden Maggie This dish turned out to be an extraordinary pairing with this wine. Golden Maggie is a VERY slightly off-dry rosé of Pinot Noir. The brightness of the wine, along with the subtle fruit notes worked wonderfully with the delicate fish and fruit salsa. The tarragon in the fruit salsa bridged beautifully with the fennel scented risotto. The layers of gentle flavors in this dish allowed the bright expressive qualities of the wine to shine without an ounce of competition.
