One of the perks that comes with traveling throughout our beautiful country is the opportunity to sample food from different regions. As we travel the country roads of Mississippi and Louisiana we find produce stands throughout. Right now we are able to find an abundance of sweet potatoes, greens, onions, kumquats, and satsumas. I LOVE the flavor of satsumas. These are a small tangerine/orange that grow very well in this area. As a farmer, I am very aware of the goodness that comes from fresh vegetables and fruits that are allowed to ripen on the vine or tree. The satsumas are not pretty but - oh the burst of citrus flavor is unbelievable!!! We have had several requests for marmalade and what an opportunity. The satsumas not only created a beautiful marmalade, but the flavor cannot be beat. We will have these up on our ETSY site (https://etsy/shop/BoondockEnterprises?ref=hdr_shop_menu ) soon.
