Our local butcher is David Fairburn commonly known as the Pig Butcher because he smokes his own bacon and sausages and makes the best ever pork pies. I should know as I ate two in a row straight from his oven this week. Anyhow, David had one turkey left by the time I got round to thinking about it and it was £60!! I just couldnt. How can anybody spend that on a turkey? Fortunately he had massive geese from the Eastern Block for a very reasonable £24. You Londoners will be fainting at that I know. After cutting away all the excess fat (to be rendered at a later date) it will sit in the oven at Gas3/170C all day long while I wander around in a daze, tripping over wrapping paper and wondering what were going to eat before dinner tonight. Im also cooking 2 turkey crowns. One from Aldi and one from Sainsburys. Look at time Im a taste tester! Not getting any freebies though. Will let you know which turns out the best.
