Our recommendation of the day: Ensaladilla Rusa or "Russian Salad." Why is this spanish dish called russian salad? It is said that a Russian invented the salad in the late XIX century. We don’t know what the original Russian salad was like, but the Spanish have made their own version, which includes tuna, potatoes, hard boiled egg, shallots, green peas, garlic, dijon, mayonnaise and of course, olive oil! You can find this salad all over Spain served as a tapas, but it can also be a complete meal in itself. We serve ours on a bed of greens, with a slice of rustic bread toasted in olive oil and topped with caviar.
