Our tomatoes in our garden are finally pouring in and we have plenty of basil. When they do, this is our favorite go-to bruschetta recipe!! Leftovers, if any, also taste delish over homemade pizza. Feel free to share: Summer Bruschetta- 3 1/2 cups seeded and diced plum tomatoes 1 tsp minced garlic ( I just use garlic press with a large clove or two) 1/4 cup diced yellow pepper 1/2 cup slivered fresh basil leaves 1/2 cup chopped green onions 1/4 cup extra virgin olive oil 2 tablespoons fresh lemon juice ( usually one lemon) salt/pepper to taste Combine all and let sit for a bit for flavors to meld before serving. Can serve with baquette or cornchips.
