PEACHY CHICKEN---- (1) 3 and one half pound chicken, cut into eighths,,,, 2 teaspoons lemon pepper seasoning,,,, 1 teaspoon salt,,,, 1 teaspoon freshly ground pepper,,,, (1) 16 ounce can peaches in heavy syrup, undrained,,,, 1 tablespoon fresh lemon juice,,,, 1 tablespoon soy sauce---- Preheat oven to 350 degrees. Place chicken in 9x13 inch baking dish. In a small bowl, combine the lemon pepper, salt, and pepper. Sprinkle both sides of chicken pieces with the lemon pepper mixture: let stand 25 minutes. Drain the syrup from peaches into a small bowl. Stir the lemon juice and soy into the syrup. Pour over chicken pieces. Bake for 1 hour, uncovered, turning once. Add the peach slices and bake for 15 minutes longer or until chicken is cooked through.
